This recipe is what I make at home when I like to enjoy spicy noodles. It uses simple ingredients , vegan, and does not require a ton of ingredients. In essence, just ramen noodles are tossed in a spicy, savory sauce but don't worry, it is not fiery hot. However, you can customize the heat factor to your own tastes. You can also use any vegetables and proteins you prefer.

Ingredients You'll Need

Dry instant ramen noodles: Those inexpensive packets of dried instant noodles. Just discard the seasoning packet that comes with them. Any flavor is fine, as the noodles inside are all the same;

Fresh garlic and white parts of green onion: These are the two aromatics I use. The flavor of fresh aromatics truly shines;

Sesame oil: for stir-frying ramen noodles;

Soy sauce: for that umami flavor. I used low sodium soy sauce;

Brown sugar: just a touch of sweetness to amp up the flavor;

Red chili flakes: bring the heat factor to the sauce. For an extra kick, feel free to double or triple the amount of chili flakes. (See more options in the recipe notes)

Green onions: use fresh green onions as a garnish and a pop of some refreshing flavor;

Possible Variations

  • Use different noodles: you can swap ramen noodles with your favorite instant noodles. If instant noodles are not your thing, feel free to use whatever kind of noodles you prefer.
  • Make it gluten-free: use gluten-free noodles like soba or rice noodles. Also, use tamari instead of soy sauce to make this recipe gluten-free.
  • I use sesame oil. Vegetable, sunflower, canola, peanut, or grapeseed oil will work too.
  • No chili flakes? Substitute it with chili powder or red chili paste. For a more intense flavor Asian red chili sauce, sambal, sriracha, or gochujang (sweet, fermented Korean chili paste) can also be used. The flavor overall will slightly change, though.
  • Add in proteins: feel free to add some stir-fried or baked chicken, shrimp, or tofu to your noodles.
  • Add in veggies:stir-fry veggies like asparagus, bell peppers, broccoli, carrots, green beans, mushrooms, and peas would work well with these ramen noodles.

  • Heat water in a pan or pot and bring the water to boiling hot.
  • Add ramen noodles and cook until al dente (tender). Be sure to remove the seasoning packet that comes with it.
  • Reserve ¼ cup of cooking noodles water to add to the sauce later. Then drain the noodles.
  • Whisk together soy sauce and brown sugar in a bowl. Then set aside.

  • Add chili flakes and stir to mix.
  • Add the sauce mix and noodles water. Then stir.
  • Add the ramen noodles and toss gently.
