Easy chicken pot pie made with biscuits instead of a traditional crust. This budget meal is definitely a family favorite!
I just love a good old fashioned chicken pot pie, especially during the colder months. Seriously, nothing screams comfort food like a homemade chicken pot pie. The hot creamy pie filling with juicy chicken meat, and mixed vegetables. It just doesn’t get any better. I personally love all types of chicken pot pie (even the little frozen ones… no shame in my game). However, When I make chicken pot pies, I like to keep it easy. Instead of using crust, I prefer to make chicken pot pie with biscuits.
Canned Biscuits: The Secret Ingredient to Quick and Easy Chicken Pot Pie
Yup biscuits. Preferably canned biscuits, because it takes less time. I also use cream of chicken soup & mixed vegetables for my chicken pot pie. Using these easy ingredients save me time, and money. So it’s a win, win!
This easy chicken pot pie with biscuits recipe is one of my family favorites. Although It’s made with vegetables, I usually serve it with more veggies on the side.

Chicken Pot Pie with Biscuits
This Chicken Pot Pie with Biscuits is the perfect comfort meal. The juicy chicken and flavorful vegetables are enveloped in a creamy sauce and topped with tender biscuits. It's also budget-friendly and fast, the perfect weeknight family meal!

Ingredients
- 3 cups cooked shredded chicken
- 2 10.5oz cream of chicken soup
- 3 cups frozen vegetables
- 2 tsp minced garlic
- 1/2 tsp ground black pepper
- 1 cups shredded mild cheddar cheese
- 1 cup shredded mozzarella cheese
- 16 canned biscuits
- 2 tbsp butter melted
Instructions
Preheat oven to 375°F.
Spray a 13×9-inch baking dish with nonstick spray.
In large bowl, combine the chicken, cream of chicken soup, frozen vegetables, garlic, and shredded cheeses.
Mix until combined.
Pour the mixture into the baking dish.
Now grab the can of biscuits.
Cut each biscuit into quarters, then place in a large bowl.
Drizzle with the melted butter, and toss.
Bake the biscuits for about 5-7 minutes on a lightly grease baking sheet.
Top the chicken mixture with the biscuits.
Bake, uncovered, for 20 to 25 minutes.
Let cool until it’s safe to eat.
Serve & enjoy!

I have used several kinds of canned biscuits now for this recipe. Seems the “ buttermilk” style biscuits do pretty good. The “original” ones don’t do well. I agree this recipe is on point

Super yummy! I used buttermilk biscuits like recommended, and had a similar issue to others, the bottoms of the biscuits would not cook. So half way through I flipped the biscuits over and that worked really well. Makes good leftovers too!Reply

3 days after Thanksgiving and the whole family is sick. Needed something mild on the tummy and easy for sick mom to make. I used canned chicken, canned peas and carrots, skipped the cheese (sorry but something very wrong about cheese in a pot pie, maybe I’m just old fashioned) and the can of soup. Had a tube of biscuits in the fridge so thankfully everything was on hand. Threw it all together with little effort and it’s baking now. Thank you for this recipe, my sick household appreciates it!

Hi Hannah, That’s not a silly question. You can cook them separate, and add on top once done. This may actually be better, since some people are saying that their biscuits come out raw if not cooked before. Happy Holidays!

Well my biscuits came out raw, I used two cans of buttermilk biscuits and they are bigger. I’ve had to put it back in two times and it still is partly doughy. Don’t know what I did wrong but it smells good

Hi Jennifer! This seems to be a common issue. I’ve been recommending that people bake the biscuits for about 5-7 minutes before, then placing it on top of the pot pie mixture, and baking as directed. I apologize for the inconvenience.

Loved this recipe! I had the same issue with the biscuits being raw on the bottom. I will definitely try to cook the biscuits for a few mins before and then add them. My husband and son loved this recipe! It is for sure a keeper!

I have made this twice now and it is a huge family favorite. I haven’t had any issues with the biscuits not being cooked thru but I did read all concerns before making and cut my biscuits smaller (used Grands Flakey Buttermilk, each cut in 8) Reminded me of a cross between potpie and chicken and dumplings. I even had some left over the last time and froze it all together. When I took it out of the freezer, I pried off the biscuits, warmed the base in the microwave, put the biscuits back on top and popped in the oven to warm back up. Came back just like fresh!

Awesome recipe! Glad to have read reviews. I added a little extra garlic (personal preference) and also some Italian seasoning blend for more flavor. Also, I used the grands biscuits and only needed one container since the are bigger! I flipped them halfway through which eliminated the soggyness of the biscuit dough at the end! It’s so yummy and filling and I make this dish quite often!Reply

I made this for one person (I live with my cat Sweetie) I halved the recipe and it turned out amazing! It’s enough for a couple of days as long as I have it for lunch and dinner. Great recipe! I love chicken pot pie. I saved the drizzle step and used buttery biscuits. I used a ceramic dish instead of glass and it did not get as hot so recommend using glass. If I use ceramic again I’m going to try baking the mix for 10 minutes before adding the pre-baked bicuits.Reply

This recipe looks so good however I recommend cooking the biscuits completely before cutting them and adding them on top. The biscuits were still doughy after cooking them for almost 40 minutes
